Factores de Consumo de Alimentos Sostenibles: El Caso de Alimentos Orgánicos

Resumen

El consumo de alimentos sostenibles y orgánicos es un tema que ha llamado la atención de los investigadores en los últimos años. Esto debido a tendencias de consumo más responsables con el medio ambiente y la salud pública. Por tanto, este estudio se propuso como objetivo identificar los factores teóricos que influyen en el consumo de alimentos sostenibles y orgánicos en la ciudad de Medellín. Para esto, se utilizó el modelo de valores-creencias-normas incluyendo valores de salud, conciencia de salud, creencias sobre alimentación saludable y confianza en los alimentos basado en el modelo de activación normativa. En ese sentido, se encuestaron 124 personas de la ciudad de Medellín. Los resultados se analizaron a partir de un Modelo de Ecuaciones Estructurales. Los hallazgos mostraron que el consumo de alimentos sostenibles se vio afectado de forma positiva principalmente por las normas sociales, seguido de la confianza en alimentos sostenibles. También, se destacó el papel de factores como la adscripción de la responsabilidad, conciencia de las consecuencias y creencias en la alimentación saludable. Finalmente, se encontró una brecha entre la adscripción de la responsabilidad frente a la conciencia de las consecuencias, reflejando sentimientos de impotencia entre las personas. Los hallazgos de este estudio ofrecen valiosas implicaciones prácticas para productores, comercializadores y gobiernos locales, promoviendo políticas y prácticas que fomenten un consumo más consciente y respetuoso con el medio ambiente.
